Best Tacos Hands Down
For the past few months, I have been traveling between two
cities for my job and when I travel, I eat out.
Last week I experienced the best tacos I have ever had at a little
restaurant in Franklin, Tennessee called Sopapillas. My colleague and I sat on the open air patio
under an umbrella and perused their mouthwatering menu. Never ever having heard of a sopapilla, I
went over the list of menu items unaware of the delicious puff pastry I would
soon devour. I ordered the Mahi Mahi
taco and was soon served a delicately balanced, inviting plate of a perfectly
cooked fish, flaky moist and grilled in a soft yet crisp flour tortilla. The Mahi Mahi laid in a bed of chopped red
cabbage, topped with cilantro, avocado and kicked with a fresh pico de gallo then
heavenly glazed in a cream cheese and jalapeno sauce that made me incredible
quiet during most of the meal. I savored
every bite and couldn’t leave a crumb behind.
To make my stomach ache even more from fullness, the two scrumptious
tacos were served with black beans tossed with pico de gallo and the most enjoyable,
buttery Spanish rice. It was to die
for. Can’t explain it any other way! My mouth is watering now as I remember this
delicious meal. And to my surprise, our
friendly waitress came back to offer us the desert menu. When we declined, she said the sopapillas
came with our meal and we couldn’t miss out.
I’m so glad we didn’t. The light,
fluff y pastry was perfect though I didn’t think I had room for anymore. If you are ever in the Cool Springs or
Franklin area just south of Nashville, check it out. The cuisine is called New Mexican and I’m
sold. I will be looking for more Tastes
of New Mexico.

Launch Party Update
My first Launch Party for the series of novels,
The Sperling Chronicles was an outstanding success. Friends, family, neighbors, and fans all
showed up to support me at The Three Dollar Café in Atlanta. This post is a thank you for being
there. If you were unable to make it, I
